route to peaceToday is Good Friday, recognized as the day more than 2,000 years ago that Jesus Christ was crucified.  Even secular scholars, historians and archaeologists now generally agree that, based on all the historical evidence, this event did, in fact, take place.  Regardless of your spiritual inclinations, if any, it was not our finest hour as human beings, to say the least.  For the Romans , Jews and Christ-followers, this was a day marked with overwhelming chaos; for different reasons and to varying degrees, yes, but undeniably tumultuous and turbulent.

I have always been an athlete. From a young age, my mother would place my two brothers and me in any sports activity that was available. I grew up playing baseball, football, basketball, soccer, and running track. In high school, I was recruited to play football as a linebacker and told to gain weight. During this time, I worked part-time in an ice cream shop and would consume one milkshake every hour trying to pack on the pounds. I went from weighing 165 pounds to 215 pounds. My diet was filled with high fat, high sugar foods so I could maintain this weight.

I went on to play college football, where my weight reached 240 pounds. I was training with my team and felt I was in great shape. Following college, I started a business and a family. The weight was tough to get off. I tried every diet on the market losing weight at first, but gaining it right back when off the diet. I was always hungry and frustrated. I continued an exercise program, but it did little to control my weight.

Eventually, my health began to suffer. My joints ached, my feet burned, my cholesterol was too high, my blood work was off, and my heart and lungs showed signs of wear. I was still exercising at the gym and riding my bike, but I felt horrible. All the doctors would do is prescribe more medication. I finally hit my breaking point, when my wife retired and we lost our health coverage. Trying to find a health carrier, I was told I was uninsurable with an individual plan and would have to join a group to get group coverage. I ended up paying $2,790 a month to cover three of us!

I had enough. I started looking into eating plans that I could sustain. A friend and fellow cyclist and I discovered Dr. Joel Fuhrman’s Eat to Live program. I began a plant-based diet but wondered how long I could stay on task. I also began to research vegetarian and vegan lifestyles. I came across the documentary Forks Over Knivesand my life changed. I made the commitment to follow a vegan diet and have never looked back. Forks Over Knives showed me how and why this eating plan worked. I loved the recipes provided and have now been on a plant-based diet for 11 months! In 6 months I lost 40 pounds. I feel better than I can ever remember. I am stronger and fitter than I was when competing in football. The response from friends and coworkers has been overwhelming. I can eat until satisfied and never find myself hungry, cranky, or fatigued.

The highlight of this lifestyle came when my doctor called with the results of my recent blood work. It was perfect! My former doctor had told me it would be impossible for me to alter my cholesterol levels without statin medication, but I proved him wrong! My monthly health insurance premiums are now $809, saving me about $2,000 a month. I am taking no prescription medications whatsoever. I can honestly say I owe my health to a plant-based diet!

How Deep Do The Lies About Nutrition Go?

obesity in AmericaA few weeks ago, I was writing about the sometimes unwitting partnership between the food industry and our government to get us “hooked” on unhealthy food (“Why You’re An Addict“).  Michael Moss’ book “Salt Sugar Fat: How the Food Giants Hooked Us does a great job covering the profit-driven motive behind the food industry getting a whole generation addicted to junk food.  And his short video on how the government underwrote the dairy industry’s moving the fat from milk into a whole new cheese industry is fascinating (watch it).

AGEs: More Bad News For Meateaters

meat is poisonAdvanced glycation end products (AGEs), also known as glycotoxins, are a diverse group of highly oxidant compounds with pathogenic significance in diabetes and in several other chronic diseases.  AGEs lead to oxidant stress in our bodies, resulting in adverse changes in gene expression and other cellular properties.  The Division of Nephrology, Deparment of Medicine, Mount Sinai School of Medicine has demonstrated a direct association between dietary AGE intake and markers of systemic inflammation in a large group of healthy subjects.  Together with previous evidence from diabetics and renal failure patients, these data suggest that dietary AGEs may play an important role in the causation of chronic diseases associated with underlying inflammation and with aging.

grilled meat poisonThe fact that the modern diet is a large source of AGEs is now well documented.  The Clinical Journal of the American Society of Nephrology points out that the popularity of high-protein diets has surged recently in the United States and other developed nations where obesity has become more and more common.  High-protein diets are nephrotoxic because they increase the circulating pool of  AGEs through an excessive dietary AGE content.  AGEs are naturally present in uncooked animal-derived foods, and cooking results in the formation of new AGEs within these foods.  In particular, grilling, broiling, roasting, searing, and frying propagate and accelerate new AGE formation.

meatfreezoneThere is new research that is now turning conventional dietary advice on its ear.  Professor Cynthia Kenyon‘s work on the source of AGEs and their genetic impact on worms is so revolutionary that many experts think she should get a Nobel Prize for it.  “It’s a fitting acronym because – along with oxidation – it’s one of the major molecular mechanisms whereby damage accrues in your body, which leads to disease, aging, and eventually, death.”   She discovered that cutting back on the dietary sources of AGEs actually alters our genetic makeup, a concept we also explored in “Want New Genes?“.  “We jokingly called the first gene the Grim Reaper because when it’s switched on, the lifespan is fairly short,” she explains.  “The ­second ‘elixir’ gene seems to bring all the anti-aging benefits — its proper name is DAF 16, but it was quickly nicknamed ‘Sweet Sixteen’ because it turned the worms into teenagers.  It sends out instructions to a whole range of repair and renovation genes,” says Professor Kenyon.
